BANANA LOAF RECIPE
This banana loaf recipe is so good I didn't even have time to let it cool down and put a dollop of butter on to take a pic! The kids love it warm and straight from the oven, eaten within 10 minutes!!!
Banana's are always best eaten fresh, but in our humid climate they tend to soften and loose their freshness quite quickly. I usually cut a fresh banana into slices and put them on the top of the uncooked loaf before baking, it just adds a homely look and the taste of the banana slices goes so well with the cooked loaf.
When beating the butter and sugar till creamy make sure not to use the high spread, I usually beat on No 2. If you beat it too fast it might curdle.
As you can see this recipe is well used! Betty, our cook at Thunzi Bush Lodge from 2007 to 2012 used to make this a lot for the guests so I wrote in the measurements for her as well as my daughter, Ava who is a keen baker. I love adding in the walnuts, pecan nuts work well too, but if anyone has a nut allergy leave them out, it is just as good without nuts.
